Peanut Butter And Jelly Cracker Sandwiches

Peanut Butter And Jelly Cracker Sandwiches – !! I think the universe decided to impose on me one last time before 2010 ended. How appropriate that I am eating this meal on the day President Obama signed the Healthy and Hunger-Free Children Act (Child Nutrition Act) into law! You can read all about it here and read the transcript as well. Yippee!!

I felt physically nauseous when I saw the packaging. If you’ve been reading from the beginning, you know that the first time I ate the sandwich, I got home and threw up. Handing over money for today’s lunch was difficult.

Interestingly, I noticed that the packaging has completely changed since I had the sandwiches last year (twice). Last time it listed a brand name and calories. Stupidly, I didn’t take a picture of the nutritional information earlier this year. You’ll notice that today’s version says nothing. They cleaned the packaging of any vital information. I wonder… Is it because of my blog?

The good news: it tasted better than any of the “sandwiches” I had in the last year, and it felt thinner. So they may have redesigned the food and packaging. Before the graham cracker was limp and disintegrated when I tore it apart. This time I must say there was a crisis! Small improvements, right? (Eating two berries for one lunch still meets USDA guidelines, by the way.)

I silently put it in my bag. I had to show my husband what the kids and I had for lunch.

While preparing dinner (grilled mackerel, red quinoa, edamame), I tossed the sandwich on the counter, nonchalantly exclaiming, “Here’s what I had for lunch!”

He continued, “It looks like what I ate when I was in the Grand Canyon!” (Background: On Spring Break he and his roommates drove to the Grand Canyon, in and out, ate MREs)

I don’t know what to label this, but it’s not a sandwich. Since I was at home and not constrained by lunch hours or secrecy, my husband and I spent time dissecting our specimen (after our son had gone to sleep of course).

My husband then declared, “I’m going to have some and we’ll compare our thoughts on the taste.” That sounded good because I’m a one-woman show and I rarely get to compare notes with anyone.

He said: “I am disappointed about the lack of jam. It’s all peanut butter. There’s no way this is a ‘sandwich’. It’s a peanut butter cookie.

I look at him, “No honey, please don’t.” I start jumping because I know Mr. Q is a determined man and he’s not lying.

“No no!! Remember how sick I got when I ate this before? Besides, it’s been in my bag for over eight hours!

“Please no, you’re sick,” which is true, as he’s having an asthma attack. Meanwhile, during our fun dissection, our huge black Labrador was sitting patiently, watching us and drooling.

“Okay, I’ll feed the rest to the dog so it doesn’t go to waste.” (Ironic that he is concerned about waste considering how many theses kids throw away)

Some random tidbits about these sandwiches: When I first posted that I had them for lunch last year, some people asked where they could buy them, as they ate them at school as a kid and missed them. I was shocked! Also, this summer, a mother emailed me to say that she took her daughter to some sort of summer school program (in eastern, I think NY) and much to her shock, these exact sandwiches were served. Therefore, they must not be completely regional. I had never met them until this year. This Welch copycat Graham Slam recipe is super easy to make and only requires a few simple ingredients! Assemble the sandwiches: place alternating strips of peanut butter and jelly. Top with remaining graham crackers to make a sandwich. To enjoy!

Assemble the peanut butter and jelly cookie sandwiches no more than 2 hours before you plan to make them, as the peanut butter and jelly will soften the cookies. If you like your cookies softer, assemble them up to 8 hours in advance.

Use fresh cookies for this recipe, as old ones will be too hard and not as enjoyable.
