Peanut Butter Jelly Graham Cracker Bars

Peanut Butter Jelly Graham Cracker Bars – !! I guess the universe decided to stick it to me one last time before 2010 ended. How fitting that I eat this meal on the day President Obama signed the Child Nutrition Act! You can read all about it here and read the transcript as well. Yippee!!

I felt physically sick when I saw the packaging. If you’ve been reading since the beginning, you know that the first time I ate the sandwich, I came home and threw up. Handing over money for today’s lunch was difficult.

Interestingly, I noticed that the packaging has changed completely since when I ate the sandwiches last year (twice). Last time it listed a brand name and the calories. Stupidly, I didn’t take a picture of the nutritional information earlier this year. You will notice that the current version does not say anything. They scrubbed the packaging for all important information. I wonder.. Is it because of my blog?

The good news: it tasted better than some of the “sandwiches” I ate last year, and it seemed thinner. So they may have redesigned the food and packaging. Before the graham cracker was limp and crumbled when I tore into it. This time I have to say it was a blast! Small improvements, right? (Having two fruits in a lunch still meets USDA guidelines, by the way.)

I quietly put it in my bag. I had to show my husband what the kids and I had for lunch.

While making dinner (roasted mackerel, red quinoa, edamame), I casually tossed the sandwich onto the counter and exclaimed, “Here’s what I had for lunch!”

He continued, “It looks like what I ate when I was in the Grand Canyon!” (Background: one spring break he and his roommates drove to the Grand Canyon, walked in and out, ate MREs)

I don’t know what to label this thing, but it’s not a sandwich. Since I was at home and not constrained by lunchtimes or secrecy, my husband and I took the time to dissect our sample (after our son went to school).

My husband then declared, “I’m going to eat some and we’ll compare our thoughts on how it tastes.” It sounded good because I’m a one-woman show and rarely get to compare notes with anyone.

He said: “I’m disappointed in the lack of jelly. It’s all peanut butter. There’s no way this is a ‘sandwich.’ It’s a peanut butter cookie.”

I glare at him, “No, honey, please don’t.” I start jumping up and down because I know that Mr. Q is a determined man and doesn’t lie.

“No no!! Remember how I got sick when I ate this before? Plus it’s been in my bag for more than eight hours!”

“Please don’t, you’re sick,” which is true as he has an asthma flare-up. Meanwhile during our fun dissection, our massive black lab sat patiently, watching us and drooling.

“Okay, I’ll feed the rest of it to the dog so it’s not wasted.” (Ironic that he is concerned about waste considering how many theses the children throw away)

A couple of random things about these sandwiches: When I first posted that I had them for lunch last year, someone asked where they could buy them, as they ate them at school as kids and were nostalgic for them. This summer, a mother emailed me to say she took her daughter to some sort of summer school program (out east, I think NY) and to her shock, these exact sandwiches were served. So they don’t have to be completely regional. I had never met them before this year. While shopping the other day, I was surprised to see these peanut butter and jelly sandwiches in the freezer section. I had to try them. I’m so glad I did!

Peanut Butter Recipes & Menu Ideas

Although they were in the freezer, they say you can try them frozen or thawed, but frozen seems to be the way to go. Even though it says “frozen”, it’s not like trying to eat a brick. Everything from the graham cracker to the filling is manageable to enjoy. Thawed is not bad, but I prefer them cold.

They turned out to be just about the perfect snack. I was late so I took a couple of them. Very handy. Then, when I got home, I started dinner, but still had a couple of hours before it was ready, so I had another one in the meantime. My kids love them too, as they are convenient for snacks that don’t involve making a mess on the counter or burning them in the microwave.

They had two flavors, strawberry and grape. I took a grape as it never seems to get as much love as the others. I’m not sure what happened to all our grape flavored food, but it just happens to be a strawberry flavored everything else. I’ll get a box of strawberries next time though.

Assemble the sandwiches: Stir alternating strips of peanut butter and jelly. Top with the remaining graham crackers to make a sandwich. Enjoy!

Assemble the peanut butter and jelly graham cracker sandwiches no more than 2 hours before you plan to enjoy them, as the peanut butter and jelly will soften the crackers. If you like the cookies softer, put them together up to 8 hours in advance.

Use fresh graham crackers for this recipe, as the stale ones will be too hard and not as fun.

If you don’t have a piping bag, no need to worry! Just place the peanut butter and jelly in separate plastic bags. Cut a small hole in one corner of each bag and pipe it onto the biscuit that way.
